Comfort food to combat covid blues

It’s little wonder Seb from Frilled Fresh has seen a rising demand for his quality, Aussie-caught fish and tasty chips when a steaming pack of fried or grilled comfort food is surely the answer to coronavirus blues – let alone a nippy winter.

Given brothers Seb, Bill and Rob all worked together at a fish and chip shop in Melton in the four years before Frilled Fresh opened, it’s fitting the business has operated with each of the brothers at the helm since.

Bill opened the doors in 2014, Rob took over in 2015, and having been there since the start of it all, October last year marked Seb’s time to be kingfish.

“We all work together and help each other out when we can – it’s a family business,” Seb says.

“We believe it’s important to support our community and we’re proud to employ seven locals at Frilled – hopefully we can increase that number in the future as the business grows.

“We’re in a handy spot, only five shops away from Coles Station Square, so come in and place your order and when you’re done with your shopping, we’ll have your food ready, waiting and piping hot.”

Seb and his crew offer a long list of fish varieties, from barramundi and flathead to salmon and couta ($6), served fresh from the grill or fryer.

And the chips (small $3) come with gravy or garlic dip, and sweet potato chips (small $5.50) are also on board.

Frilled Fresh is also known for no less than a dozen delicious varieties of burgers, and an impressive selection of souvlaki which cover chicken, fish, lamb and falafel.

From $5.50, burgers include the likes of smoky barbecue chicken, classic Aussie, vegie, and the Flamin’ with a hint of jalapeno and hot chilli sauce.

Garlic and herb grilled whole squid, and prawns done the same, are two of five specialties that Seb reckons are worth dropping in for.

Steak sandwiches, and all the usual faves and more are here, as well – think potato cakes, dim sims (including homemade), and battered prawns, mussels and onion rings, along with pumpkin cakes for the vegos, plus fresh-made salads.

Are there any desserts? Yes … a line-up of 10, for which the word “indulgence” was surely invented. It’s not just banana and pineapple fritters and jam doughnuts that are here.

Among others, there’s mixed berry cheesecake, mars mud cake, cookies ‘n’ cream cheesecake, homemade chocolate mousse, cinnamon-sugared churros, lemon meringue pie, and the delightfully over the top battered Mars Bars and Oreos.

COVID-19 protocols are followed in-store, and there’s a home delivery service via Menulog or Door Dash.
